Sweet Potato Rösti – A Perfect Base & Snack

If there is something I like it’s those basic recipes. Those that allow you to fill up the fridge and freezer with stuff that makes a healthy and delicious meal in no time! It’s not fancy or advanced recipes, but it’s those that work and that I make the most. So please excuse me for posting this almost-too-easy-to-be-a-recipe recipe, but do me the favor if you haven’t tried something similar, then just consider making these, cause they actually rock!
Currently I make a variety of these rösti, or patties as you could call them, cause they are great as baby food too. You can use different root veggies, squash, kale etc. and when mixed with some egg and sometimes a little wholegrain, they actually constitute a baby meal. When I have them myself I top them with different stuff as cream cheese, avocado, salmon, cottage cheese or almond butter. It’s a great way to have a portion of vegetable, without having to make a salad or something similar, which I too often haven’t got the time to make for lunch. Best part, they freeze great too and you can heat them in a toaster which only takes a minute!

Sweet potato rösti
Makes 12

500 g sweet potatoes
1 large onion
4 large eggs
1 tsp salt
Fresh ground pepper

Wash and scrub the sweet potatoes. Grate the potatoes and the onion and place both in a bowl. Whisk in the eggs and season with salt and pepper. Heat some oil in a frying pan. Add some generous spoons of sweet potato mix and flatten them with the backside of the spoon. Let them fry on medium heat and be very careful when you flip them. Fry until golden and firm on each side.

  • Such a great idea! I usually make rösti with celery as it is such a good way to eat celery (not a big fan otherwise, guilty!) but these really look yummy. Sweet potato is such a good treat. I also really like basic food recipes, quick and easy to make :)
