If I say the word ‘smoothie’ most of you, myself inclusive, probably imagine a tall purple/pink drink, filled with berries, milk, banana and other good stuff, and with the word ‘juice’ apple and orange automatically follows. But how about this greenylicious smoothie filled with vegetables instead??
I still love the classic pink berry smoothie, but sometimes I simply crave something less sweet and something which gives me the feeling of being super healthy, and starting the day by drinking vegetables is a pretty good way to go!
I still think a smoothie should be somewhat sweet and creamy, and instead of blending a whole bunch of veggies together, which could be a little strange and not very appetising, I have made a green juice out of broccoli, lemon, cucumber, zucchini and apples and then blended it with avocado and almonds. In this way you get a lot of vitamins, minerals and antioxidants from the vegetables without having to chew your way through a ‘smoothie’ and the almonds add some fibers and avocado some creaminess and healthy fat, totally win win!
It was my study partner Laura who brought this concept of blending avocado, berries, nuts etc. into homemade vegetables juice, and she is pretty creative coming up with new ideas. This recipe is only one way to do it, and if you haven’t got a juicer you can also buy apple juice and blend it with e.g. avocado, kale and nuts, or buy a mixed vegetable juice and blend spinach, banana and almonds in. Everything is possible just be creative and experiment a lot, its fun.
But this recipe is tested and gooood! So if you are up for it, I dare you to switch the classic pink smoothie out with this for at least one breakfast or snack meal and see how you feel about it. I sure have been creative with the green drinks for the last week, some more successful than others, one morning I ended up with a porridge like kale freak show, very interesting…. Hopefully you’ll like this one and open your eyes and tastebuds towards a green and gorgeous start of the day!
1 big broccoli stock, or 2 smaller
4-6 apples, depends on size and need for sweetness
1. Wash all of the fruit and vegetables.
2. Place broccoli stock, zucchini, cucumber and 1/4 lemon in the juicer, and press start. Then add 4 apples. Taste it and add more apples and lemon if necessary. It is okay if it is semi sweet and just a bit sour, because the avocado and almonds will need a little power in order to get the perfect balance.
3. Add juice to a blender with avocado meat and almonds. Blend until all almonds are dissolved.
4. Pour into glasses and serve with a few ice cubes in.
