Boost Yourself w. Beautiful Beetroot Juice

Have you ever heard of vitamins in a glass?

Well, this beautiful, fresh juice I’m about to share with you is exactly that.

It’s bursting with vitamins, and even those who aren’t too fond of vegetables will be smitten with this delicious drink.

At the heart of this juice are beets. They bring beautiful color, high doses of vitamins B and C, and perfectly balanced sweetness with tart lemons and spicy ginger.

Apple and carrot serve as the base, adding their sweetness and juicy goodness to create a drink that’s hard to resist.

Making fresh juice is a wonderful way to get your daily dose of vitamins, and you can play around with different fruits and vegetables to create your unique blends.

I recommend using 80% vegetables and 20% fruit for a balanced sweetness and to keep fructose levels in check.

Adding lemon, ginger, or fennel can give your juice a little extra zing, and adding avocado or frozen berries will make it even creamier.

But here’s a word of caution: While green juice is healthy and nutritious, remember that you’re also burning a lot of energy.

So don’t just think of it as a snack – 2.5 carrots, 1-2 beets, and one apple make a light meal that will leave you feeling full.

Beetroot Juice

Ingredients

  • 3 beetroots, medium size
  • 5 big carrots
  • ¼ lemon
  • 2 apples
  • 2 cm fresh ginger

Instructions

  • In cold water rinse and clean the carrots, beets and apples, thoroughly until all dirt is gone. Cut of the ends of the carrots and beets.
  • Wash the lemon and ginger as well, you do not have to peel these either. Even though you can choose to peel the lemon if you do not like the (lovely) bitter twist it leaves in your juice.
  • Add everything to your juicer and let it do its magic.

Notes

Serve straight away in order to drink as many vitamins as possible, yup they slowly disappear after the juices have been released, so hurry up! Add a couple of ice cubes and enjoy!
If necessary you can keep the juice in a light and air tight container for some hours in the fridge, and it will still be great!
