It’s been a while since I’ve made a pie which is in fact a shame! I love pies. They are absolutely incredible, the crisp, buttery crust with a nutty flavour from the whole grain flour combined with the creamy filling. They are even easy to make and can be varied in all kinds of ways. As soon as you have a great crust (which you can get from this recipe) it’s just to add whatever great combos you like. Then top it off with a creamy filling, here you can choose the healthier version as I did with cottage cheese and eggs, or go real delicious and use cream and eggs.
This pie is a classic looking one – but I do have a crush on the galette, and if you have a crush too remember to take a look at this one or these cutie pies. For this recipe I used feta cheese, but for the next time I think I’ll try using blue cheese or a whole lot of grated emmentaler. I know asparagus are soon out of season so of course you can switch these too, and I thought that slightly grilled aubergine wedges or cherry tomatoes could be nice, but maybe you have an idea too?
Well this pie is wonderful however you choose to make it, and you can serve it straight from the oven or use it for brunch or your lunchbox.
