Meet my sweet and tangy apple compote. It’s served with a raw and delicious cream made thick with the help of juicy organic lemons.

It’s a simple and easy dessert, perfect anytime, anyplace.

The recipe is super easy to make; all you need are apples and lemons.

You can use any kind of apples you like. However, I recommend using a sweet variety to avoid the need for added sugar.

All you have to do is chop up your apples, add a little water and cook them until they are soft and tender.

For the cream, all you need is some lemons and a little sugar.

The best part about this dessert is that you can make a big batch and store it in the fridge or freezer. You can have a quick and easy dessert whenever you want.

It’s also a great way to use up any extra apples you might have lying around.

Ginger Apples with a Thick Lemon Cream

Ingredients

Apples compote with ginger

  • 3.5 KG apples choose some that are smashy when boiled and have a natural  sweetness
  • 75 G sugar sweetener of your choice
  • 1/3 cup water
  • 1 tsp freshly grated ginger

Raw lemon cream

  • 1/2 cup generous heavy cream
  • 1 tsp organic lemon zest
  • 2 tbsp organic lemon juice
  • 1/2 tsp ground vanilla
  • 1 tbsp sugar or sweetener of your choice

Topping

  • Chunks of dark chocolate

Instructions

  • Peel and dice the apples. Combine all the ingredients for the apple compote in a pot and bring to a boil. Let it simmer until tender for 8-10 min, then remove from heat and set a side to cool.
  • Make the lemon cream by stirring all the ingredients together in a bowl and set a side for 30 min in the fridge. The lemon will slowly thicken up the cream and you don’t need to whisk it thick.
  • When the compote has cooled and the cream is thick you can serve the dessert in glasses with apple compote in the bottom and lemon cream on top finished with delicious dark chocolate.
  • Keep well in the fridge for a day or two, and can easily be made in advance.. Enjoy!
