Hi guys. It’s been a while, and to be honest there might be a little longer between the post in the following month. We are in the middle of a wonderful but hectic period in our lives, and between renovating our new house and writing a master thesis there is not much time left to cooking and let alone develop new recipes. I’m telling you life is wonderful and crazy right now, but I’ll keep you posted and promise to add as many new recipes as time allows me!
It is actually some time since I shot this post, and I was beginning to fear that kale was out of season, BUT yesterday I saw it there green and delicious on the shelve of my local grocery shop and I took it as a clue to go home and post this recipe. It is one of my absolute favourite and easy go-to recipes. It takes 5-10 min to whip up a batch and I keeps fresh and delicious in the fridge for several days. You can pair the kale with almost everything and it just rocks! I have added some of my favourite combinations, and to be honest and sometimes add everything together as one big mixed mash up, which is absolutely wonderful too. A little bonus with this way of preparing kale is that massaging the kale helps your body digest it. You break down some of the tough structure in the kale by massaging it but still get the benefit of all the wonderful fibers.
300 g kale leaves
Juice from 1 lemon
1 tbsp oil
1/2 tsp salt
1/2 tsp honey
Favorite add- ins & combos
Avocado + goats cheese + dried cranberries
Chicken + roasted carrots/sweet potatoes
Toasted nuts + dates +feta
Rinse your kale thoroughly and pad it dry. Use your hands to tore pieces of the kale leaves from the stem. Place the kale in a large bowl. Add lemon juice, salt and honey. Use both hands to massage the kale, use all you’ve got and give it a rough time ;) Massage the kale for 2-3 min, until the leaves begin to get soft and dark green. Now you actually have your finished kale and you can ix it up with all sort of ingredients or simply use it as a fresh side.
