As soon as spring knocks on the door I instantly begin to crave shakes, smoothies and juices. I love refreshing drinks and I could almost live of these if I didn’t stop myself and ordered some solid food on board as well.
Even though the berry season has not yet kicked in it’s still my favourite ingredients in shakes. I think they add such a fresh twist and balance the creamy coconut milk absolutely wonderful. The best off-season option would be to have a freezer stocked up with berries picked during the summer – but since my freezer is a tad to small to hold a years supply of berries, I choose the best store bought frozen version as possible. Try to find organic berries picked during the high season, preferable from a country you know ‘rock’ during the strawberry season – here I am not an expert, but the scandinavian countries are pretty awesome at the berry thing.
As soon as you have some tasty berries you will have yourself a tasty milkshake. Use a full fat coconut milk to get as much creaminess and flavour as possible – or simply use 300 ml nut milk or regular milk. You can also use other kinds of berries, I also LOVE the raspberry version, but try to keep it simple since it’s the combination of the creamy coconut milk and the fresh berries that work the magic!
Strawberry & Coconut Milkshake
150 g frozen strawberries (you can use fresh when in season, and then use frozen bananas instead)
2 ripe bananas
100 ml full fat coconut milk
200 ml ice water or coconut water
1/2 tsp vanilla
Zest from 1/2 organic lemon (optional)
Add all the ingredients in a blender and blend until you have a foamy thick milk shake – Serve straight away!
