Being a bit of a health freak and all have made me a bit cautious about adding too much fruit to savory dishes. Not that fruit is unhealthy at all but I have a heart that beats pretty much for the love of fruit, including dried fruit as dates and figs, so I sometimes have to remind myself not to go fruit-crazy and end up high on fructose, especially now that we have entered the glory season of flavor exploding and colorful fruit-fantasia, love it! Did I mention I currently eat 2 large watermelons a week well yeah now you might understand!
But the other day we were at my parents in law for a little sunshine BBQ. My mother in law is quite good at experimenting with new salads and recipes in general and she had whipped up a delicious salad with half veggies half fruit. And yuuum the combination of sweet and juicy fruit with crispy asparagus accompanied by the salty and grilled meat was absolutely delicious and right there and then I planned to consume this salad to all of the remaining BBQ nights this summer.
The salad is rather simple and therefor very dependent on the quality of the fruit and vegetables you use. I made my own version of the salad and added small personal twists and changes as a honey and vanilla dressing and salty pistachios. I thought about adding shaved fennel too, which I think would be delicious, but I actually wanted to keep the recipe as simple as possible and just give the tip that it would be an awesome twist. If you want to enjoy this as a lunch meal I would add some toasted rye or sourdough croutons and maybe some chunks of chicken. But it is delicious as it is and it will be perfect for most grilled meats including fish.
Summer Salad with Strawberries & Asparagus
Serves 4-6 as a side dish
1 bundle of green asparagus, cut in smaller pieces
300 g strawberries, cut in half
200 g green and/or red grapes, cut in half
150 g feta cheese
1 cucumber, thinly slices in half
100 g baby salad leaves
50 g salted pistachios (shell removed)
Honey and vanilla dressing
Juice from 1 organic lemon + a little zest
2 Tbsp olive oil
1 Tsp. honey
1/4 tsp ground vanilla
A generous pinch of salt
Fresh ground pepper
Wash and clean all fruit and vegetables. Slice them according to the instructions and combine them in a large bowl. Whisk together the dressing and mix it with the salad. At last chop or crumble the feta cheese and gently fold into the salad. Coarsely chop the pistachios and top the salad with these. Serve straight away.
